Cheaty potato and butterbean bake
I wouldn’t exactly call this one cooking, more assembling… But I’m short of time this evening, so I put together a quick potato bake for lunch tomorrow. I had a pack of Lidl sauteed potatoes in the fridge, so layered some up with tinned butterbeans, defrosted broccoli from the freezer, and some Violife creamy, and baked it for half an hour or so. It smelled great while it was baking!

Gluten free pasta with peas, spinach, soya beans, sugar snap peas, olives and a lemon and olive oil dressing.
Served with a simple salad of mixed leaves, shredded carrot, beetroot and grapes.

Gluten free pasta with roasted vegetables and olives
I roasted courgette, celery and mushrooms, defrosting some spinach in the tray for the last couple of minutes in the oven. I also cooked some peas in with the pasta and then mixed it all together with some black and green olives.

Creamy vegetable soup.
The creaminess in the soup came from a couple of spoonfuls of Violife Creamy. It doesn’t need much and it has a lovely flavour.
Vegetable fried rice with dill and veggie sausage.
I used brown basmati rice that I’d cooked last week and frozen, it works very well for stir frying straight from frozen. It was seasoned simply with tamari and dill.

I thought it might be nice for a change to have selection of salads for my work lunches, so I made quick pickled veg (cauliflower, mushroom and courgette), lentil salad with red pepper, olives, parsley and celery, and pasta salad with sweetcorn, soy yoghurt and dill.

Bagel with marinated courgette slices, hash brown, and vegan mayonnaise.
For me, the last day of the working week is for something more indulgent than the usual recipes, which I try to balance well nutritionally for the vegan diet… Fridays are for silly food! So I sliced a courgette lengthwise, marinated it in tamari, liquid smoke, fennel and celery salt and baked it for 20 minutes, turning half way through. Oh it did make a good sandwich!

Green bean, potato and walnut cous cous with basil soy yoghurt dressing.
I dressed the cooked beans and potato with white balsamic, the cous cous was soaked in vegetable stock and caraway, and the dressing was just plain soy yoghurt with basil and salt. I toasted the walnuts in the oven before roughly chopping them, and goodness me it was difficult not to eat them all up before they made it into the cous cous…

Roast cauliflower and broccoli with yellow split peas slow cooked in a tomato and caraway sauce.
Served with mint soy yoghurt sauce and steamed greens.
Rice and black bean salad with roast sweet potato and courgette.
The salad has sweetcorn, celery, olives and coriander and is dressed with white balsamic vinegar. The vegetables were roasted with a little thyme and anardana powder. I’d never used anardana powder before, it was part of my Christmas present from my sisters. It’s powdered pomegranate powder and has a sharpness a little like sumac. Along with a flavour I can’t quite put my finger on yet…
