I was after something quick and green to put together for a work lunch.
I seem to be eating spinach every day at the moment, I’m enjoying it so much, the walnuts are there to up the protein and the slightly aniseed flavour of the tarragon goes well with the simple dressing and helps lift the flavour.
For the salad
250g cooked rice (I’m using a microwave pouch of brown basmati rice)
3 tablespoons fresh tarragon leaves
For the dressing
1 tablespoon lemon juice
2 teaspoons extra virgin olive oil
Half a teaspoon tamari
Start by breaking up the walnuts into manageable chunks, I just squish them in my paw, and pop them in a dry pan on a low heat to toast, they will only take a minute or so, make sure you catch them before they burn as they go rather acrid.
Heat the microwave rice.
Add the spinach to a large bowl and put the toasted walnuts and warm rice on top of the spinach to wilt it slightly and the other salad ingredients and mix.
The salad dressing doesn’t need to be made separately just add the lemon juice, oil and tamari straight into the salad and stir through well so that everything is nicely coated.
Either eat straight away or pop in a lunch box in the fridge for tomorrow lunch!
