Coconut marzipan biscuits

Golden, coconutty, toasty little biscuits with a delicious marzipan centre... 
what's not to love! Neither of us was making anything particularly new 
or exciting on the savoury front today, but we found the time to come up with these 
delicious little biscuits, they're very good dipped in tea...

makes 16
 
50 g gluten free plain flour 
45 g coconut flour 
5 g almond milk powder 
50 g gluten free oats 
20 g desiccated coconut 
75 g sugar 
a pinch of salt 
100 g vegan margarine 
1 hpd tbsp golden syrup 
70 g marzipan 
 
Preheat the oven to 200 degrees c, and line a tray with baking paper. 
Mix the flour, coconut flour, almond milk powder, oats, desiccated coconut, 
sugar and salt together in a large bowl. Melt the margarine, and add it 
along with the syrup to the bowl. Mix everything together well to form a fairly 
stiff dough. 
Roll the marzipan into 16 little balls.
Separate the dough into 16 pieces, and roll each one into a ball too. Flatten 
the dough in the palm of your hand and place the marzipan in the centre.

Roll the dough around the marzipan, and then, using the palm of your hand 
again, gently squash it to make a biscuit about 5 cm across.

Place the biscuits on the tray and bake for 12 minutes until they're beautifully 
golden and smelling lovely and toasty.
