This is a salad that I made to take to work for lunch, I’d fancied the flavours of American style baked beans but wanted something much quicker. There is a little cooking involved, but only one pan! It was delicious.
For the salad-
1 small onion, sliced
2 courgettes, cut into batons
1/2 tbsp oil
2 roasted red peppers (from a jar, I use the Lidl ones in vinegar), sliced into strips
350g cooked beans (I used the Epicure Mediterranean bean mix)
For the BB dressing-
1/2 tsp molasses
2 tbsp tomato paste
2 tbsp balsamic vinegar
1/4 tsp garlic granules
50 ml water
Pinch of smoke powder (or 1 tsp liquid smoke)
Salt and pepper
Saute the onion over a medium heat stirring frequently until starting to turn translucent, about 5 minutes. Add the courgette and continue to cook for a further 8 to 10 minutes until the courgette has softened a little but still has some bite (continue the frequent stirring too!)
Tip the vegetables into a bowl and set to one side.
Put all the dressing ingredients into the pan and bubble for a minute or two until it’s all nicely combined. Add the beans and the vegetables and give it all a good stir.
