Cous cous salad with roast brussel sprouts, cauliflower and peppers, and cranberry balsamic dressing.
The cous cous was a gluten free one from asda, it has a lovely toasty flavour.
Yellow split pea and butternut squash curry.
The split peas were simmered in vegetable stock with garam masala, ginger, and garlic and lemongrass spice drops. Then roasted butternut squash and plain soy yoghurt were stirred through at the end..
